Paella, Coustellet

One of the joys of arriving at a market day early is watching the Paella vendor set up. They have enormous pans heated with gas. They saute chicken first and then bit by bit add the sauces and spices and lastly the seafood.

By the middle of market thsi is what you have to try to walk by, with the most wonderful smells wafting about. We picked up enough for 4 people which turned out to be enough for 8. Delicious.
